Having celebrated its fifth anniversary this year, Thyme has established itself as a true player in the Westchester dining scene. Owner and Executive Chef Tom Costello was born to be in the restaurant business. His great-grandfather opened the original Costello’s Restaurant in New York City in 1923 and his uncle later opened Runyon’s in 1976, New York’s first sports bar. A graduate of the Culinary Institute of America, Costello enjoyed a two decade long tenure working in some of NYC’s most respected restaurants including Tao, Nobu and ‘21’ Club as well as running operations at Indochine, Bond Street and Republic before heading up to Westchester to open his own spot. Named “Best Steakhouse” by Westchester Magazine in 2013, Thyme continues to wow diners with their chops, seafood and gluten free options. Costello, diagnosed with Celiac disease, has transformed the menu at Thyme to reflect not only seasonal offerings but also a thorough selection of gluten free options as well.
